Add the soaked red beans, vegetable broth, and bay leaves to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth or water if necessary.

In a separate pot, cook the long-grain white rice according to package instructions. Typically, this involves bringing 2 cups of water to a boil, adding the rice, covering, and simmering for about 18-20 minutes until the rice is tender and water is absorbed.
