Hushpuppies

Method

Fish

  1. 1

    Prepare the batter

In a large bowl, mix the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined.

  2. 2

    Heat the oil

In a deep frying pan or a pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Fry the fish

Dip each fish fillet into the batter, allowing excess to drip off, and carefully place it in the hot oil. Fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Chips

  1. 4

    Prepare the potatoes

Peel the potatoes and cut them into thick fries. Rinse them under cold water to remove excess starch.

  2. 5

    Fry the chips

In another pot, heat oil to 350°F (175°C). Fry the chips in batches until golden and crispy, about 5-7 minutes. Season with salt to taste.

Slaw

  1. 6

    Mix the slaw ingredients

In a large bowl, combine shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss well to combine and adjust seasoning to taste. Let it sit for at least 30 minutes before serving.

Hushpuppies

  1. 7

    Prepare the hushpuppy batter

In a bowl, combine cornmeal, all-purpose flour, baking powder, sugar, and salt. Mix well. In another bowl, combine the chopped onion, egg, and milk, then combine the wet and dry ingredients until just mixed.

  2. 8

    Fry the hushpuppies

Heat oil in a deep skillet over medium heat. Once hot, drop spoonfuls of the batter into the oil and fry until golden brown, about 3-4 minutes per side. Drain on paper towels.
