Brisket Preparation

    Prepare the Brisket

    Trim excess fat from the brisket, leaving about 1/4 inch for flavor.

    Make the Rub

    In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, black pepper, and salt. Mix well.

    Apply the Rub

    Rub the mustard all over the brisket, then generously apply the spice rub evenly across the surface.

    Marinate

    Wrap the brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Smoking the Brisket

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). Soak wood chips in water for at least 30 minutes before using.

    Smoke the Brisket

    Place the brisket in the smoker fat side up. Add the soaked wood chips to the smoker box. Smoke for about 1 hour per pound, or until the internal temperature reaches 195°F (90°C).

    Spritz with Vinegar

    Every hour, spritz the brisket with apple cider vinegar to keep it moist.

Serving the Brisket

    Rest the Brisket

    Once done, remove the brisket from the smoker and let it rest for 30-60 minutes before slicing.

    Slice the brisket against the grain into thin slices. Serve with pickles, coleslaw, and BBQ sauce.
