Dough Preparation

    Prepare the Dough

    In a medium saucepan, combine butter and water. Bring to a boil over medium heat.

    Mix Flour

    Once boiling, add the all-purpose flour and salt all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

    Cool and Add Eggs

    Remove the pan from heat and let it cool slightly, about 5 minutes. Then, add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine the peeled and deveined shrimp, softened cream cheese, chopped green onion, minced garlic, lemon juice, salt, and black pepper. Mix until well combined.

Assembly and Baking

    Preheat Oven

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Shape the Puffs

    Using a pastry bag or a spoon, pipe or scoop small mounds of the dough onto the prepared baking sheet, leaving space between each puff.

    Add Filling

    Using your finger or a small spoon, create a small indentation in the center of each mound and fill it with the shrimp filling.

    Bake

    Bake in the preheated oven for 20-25 minutes or until the puffs are golden brown and puffed up. Remove from the oven and let cool slightly.
