Method
Shrimp Preparation
- 1
Prepare the Shrimp
Peel and devein the large shrimp, leaving the tails intact. Rinse them under cold water and pat dry with paper towels.
- 2
Season the Shrimp
In a bowl, combine salt, black pepper, and lemon juice. Add the shrimp and toss to coat evenly. Set aside to marinate for about 15 minutes.
Crab Filling
- 3
Make the Crab Filling
In a mixing bowl, combine the jumbo lump crab meat, cream cheese, mayonnaise, Dijon mustard, finely chopped chives, Old Bay seasoning, salt, and black pepper. Gently fold the ingredients together until well combined. Be careful not to break up the crab meat too much.
- 4
Stuff the Shrimp
Take a shrimp and carefully stuff about a tablespoon of the crab mixture into the cavity. Press gently to seal, and repeat with the remaining shrimp.
Breading and Frying
- 5
Set Up Breading Station
Place the all-purpose flour in one shallow dish, beat the eggs in another dish, and place the breadcrumbs in a third dish.
- 6
Bread the Shrimp
Dredge each stuffed shrimp in flour, shaking off the excess. Dip it into the beaten eggs, allowing any excess to drip off, then coat it in breadcrumbs. Repeat for all stuffed shrimp.
- 7
Heat Oil
In a heavy-bottomed pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
- 8
Fry the Shrimp
Carefully place the breaded shrimp in the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and cooked through. Use a slotted spoon to transfer the fried shrimp to a paper towel-lined plate to drain excess oil.
