Preparation of Ingredients

    Grill the Chicken

    Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Remove from the grill and let it rest for 5 minutes before slicing.

    Prepare the Vegetables

    While the chicken is grilling, wash and dry the mixed greens. Julienne the carrots and cucumber, and slice the red bell pepper into thin strips. Chop the fresh cilantro roughly.

    Chop the Peanuts

    Coarsely chop the peanuts and set aside for topping the salad.

Making the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, minced garlic, grated ginger, salt, and black pepper until well combined.

Assembling the Salad

    Mix the Salad

    In a large salad bowl, combine the mixed greens, sliced grilled chicken, carrots, cucumber, red bell pepper, and cilantro.

    Add Dressing

    Drizzle the sesame dressing over the salad and toss gently to combine all the ingredients.

    Top with Peanuts

    Sprinkle the chopped peanuts on top of the salad for added crunch and flavor.
