Chicken Marinade

Pickled Vegetables

Method

Chicken Marinade

  1. 1

    Prepare the Marinade

In a large bowl, combine minced garlic, soy sauce, fish sauce, brown sugar, black pepper, and vegetable oil. Mix well.

  2. 2

    Marinate Chicken

Add the chicken thighs to the marinade, ensuring they are coated evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  3. 3

    Cook the Chicken

Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until fully cooked and golden brown. Let it rest for a few minutes before slicing.

Pickled Vegetables

  1. 4

    Prepare the Brine

In a mixing bowl, combine white vinegar, water, sugar, and salt. Stir until the sugar and salt dissolve.

  2. 5

    Pickle the Vegetables

Add the julienned carrot and daikon radish to the brine. Let them sit for at least 30 minutes, or until they soften and absorb the flavors.

Banh Mi Assembly

  1. 6

    Slice the Baguette

Cut each baguette in half lengthwise, making sure not to cut all the way through, so they remain connected.

  2. 7

    Spread Mayonnaise

Spread a generous layer of mayonnaise on the inside of each baguette.

  3. 8

    Add Chicken and Vegetables

Layer the sliced chicken, pickled vegetables, cucumber slices, fresh cilantro, and jalapeño slices into each baguette.

  4. 9

    Serve

Cut the assembled Banh Mi in half and serve immediately. Enjoy your Vietnamese Chicken Banh Mi!
