Sweet Potato Fries

Preheat the Oven
Preheat your oven to 425°F (220°C). This high temperature will help achieve crispy fries.

Prepare Sweet Potatoes
Peel the sweet potatoes and cut them into thin strips, about 1/4 inch thick. Ensure they are uniform for even cooking.

Coat Sweet Potatoes
In a large bowl, combine the sweet potato strips with olive oil, cornstarch, paprika, garlic powder, salt, and black pepper. Toss well to coat all the fries evenly.

Arrange on Baking Sheet
Spread the coated sweet potato fries in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded.

Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are crispy and golden brown.
Aioli

Prepare Aioli Base
While the fries are baking, prepare the aioli. In a small bowl, combine the mayonnaise, minced garlic, and lemon juice.

Add salt and black pepper to the mayonnaise mixture to taste. Mix until smooth and well combined.
