Tofu Preparation

Press and Cut Tofu
Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top for about 20 minutes. After pressing, cut the tofu into bite-sized cubes.

Coat Tofu with Cornstarch
In a large bowl, toss the cubed tofu with salt and ensure each piece is evenly coated. Gradually sprinkle cornstarch over the tofu cubes and gently mix until they are fully coated.

Fry the Tofu
In a large, deep frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the tofu cubes in batches, frying them until golden brown and crispy, approximately 5-7 minutes per batch. Use a slotted spoon to remove the fried tofu and place them on a plate lined with paper towels to drain excess oil.

Prepare the Sauce
In a small saucepan, combine water, rice vinegar, sugar, soy sauce, ketchup, minced garlic, and red chili flakes. Place over medium heat and stir until the sugar is dissolved and the mixture begins to simmer.

Thicken the Sauce
Once simmering, reduce the heat to low and let the sauce cook for an additional 5-7 minutes, stirring occasionally until it thickens slightly. Remove from heat and set aside.
