Prepare Pancake Batter

    Mix Ingredients

    In a mixing bowl, combine rice flour, turmeric powder, salt, coconut milk, and water. Whisk until smooth and let it rest for 30 minutes.

Prepare Filling

    Cook Pork and Shrimp

    In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the pork belly and cook until slightly crispy. Add the shrimp and cook until they turn pink. Remove from heat.

    Prepare Vegetables

    In the same skillet, add the bean sprouts and chopped green onions, stir-frying for 1-2 minutes until just wilted. Set aside with the pork and shrimp.

Cook Pancakes

    Heat Skillet

    In a non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat until it’s hot.

    Pour Batter

    Pour about 1/2 cup of pancake batter into the skillet, swirling to evenly coat the bottom. Cook for 2-3 minutes until the edges are crispy and the top is set.

    Add Filling

    Place a portion of the cooked pork, shrimp, and vegetable mixture on one half of the pancake.

    Fold and Finish

    Fold the pancake in half and cook for another 1-2 minutes until golden brown. Repeat with remaining batter and filling.

Serve

    Plate and Garnish

    Serve the Banh Xeo hot with lettuce leaves, fresh herbs, and a small bowl of Nuoc Cham for dipping.
