Tofu Marinade

Prepare the Tofu
Press the firm tofu to remove excess moisture. Cut it into 1/2-inch thick slices.

Make the Marinade
In a bowl, combine soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Mix well.

Marinate the Tofu
Add the tofu slices to the marinade, ensuring they are well coated. Cover and let marinate for at least 30 minutes.

Pickle the Vegetables
In a separate bowl, mix sugar, salt, and rice vinegar until dissolved. Pour this mixture over the julienned vegetables. Let them sit for at least 30 minutes.

Cook the Tofu
Heat a non-stick skillet over medium heat. Add the marinated tofu slices and cook for about 5 minutes on each side, or until golden brown.

Prepare the Baguette
Slice the baguette lengthwise without cutting all the way through. Toast it lightly if desired.

Assemble the Banh Mi
Spread mayonnaise on both sides of the baguette. Layer the cooked tofu, pickled vegetables, fresh cilantro, and sliced jalapeños inside the baguette.

Cut the filled baguette into manageable pieces and serve immediately.
