Marinating the Chicken

    Prepare the Marinade

    In a bowl, combine soy sauce, Sriracha, minced garlic, grated ginger, lime juice, brown sugar, and salt. Mix well until sugar is dissolved.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Grilling the Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Chicken

    Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 75°C (165°F). Remove from grill and let rest for a few minutes before slicing.

Assembling the Banh Mi

    Slice the baguettes lengthwise, without cutting all the way through, creating a pocket.

    Spread 2 tablespoons of mayonnaise inside each baguette.

    Layer the grilled chicken slices, cucumber, carrot, jalapeños, and fresh cilantro inside the baguette.
