Prepare the Broth
In a large pot, add the beef bones and cover them with water. Bring the water to a boil over high heat, then reduce to a simmer.

Season the Broth
Stir in the fish sauce, salt, and sugar. Simmer the broth for 4-6 hours, skimming any impurities that rise to the surface.

Strain the Broth
After simmering, strain the broth through a fine mesh sieve to remove solids, returning the clear broth to the pot. Keep warm.
Noodle and Topping Preparation

Cook the Noodles
In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions until tender. Drain and set aside.

Prepare the Beef
While the noodles are cooking, thinly slice the beef sirloin against the grain. This will ensure tenderness.

Assemble the Soup
In serving bowls, place a portion of the cooked rice noodles. Top with raw beef slices, then ladle hot broth over the noodles and beef, allowing the beef to cook slightly from the heat.

Garnish the soup with fresh basil, bean sprouts, lime wedges, sliced jalapeños, and chopped green onions.
