Preparing the Broth

Simmer the Broth
In a large pot, add the beef bones and water. Bring to a boil, then reduce to a simmer. Skim off any foam that rises to the top.

Season the Broth
After 3 hours, stir in fish sauce and salt to taste. Continue simmering for another hour.
Cooking the Noodles and Preparing Toppings

Prepare the Rice Noodles
While the broth simmers, soak the rice noodles in hot water for about 30 minutes or until soft. Drain and set aside.

Slice the Beef
Thinly slice the beef sirloin or brisket against the grain. You can freeze the beef for about 30 minutes before slicing to make it easier.

Prepare the Garnishes
Chop the green onions, rinse the bean sprouts, and wash the fresh basil and cilantro. Cut the lime into wedges.
Assemble the Pho

Serve the Noodles
In a bowl, place a serving of the soaked rice noodles.

Add the Broth
Ladle the hot broth over the noodles.

Top with Beef and Garnishes
Add the raw sliced beef on top of the noodles, allowing it to cook slightly in the hot broth. Add the bean sprouts, green onions, basil, cilantro, and lime wedges.

Season to Taste
Top with fresh chili peppers and additional fish sauce or lime juice as desired.
