Method
Preparing the Rice
- 1
Rinse the Sticky Rice
Place the sticky rice in a large bowl and cover it with water. Let it soak for at least 4 hours or overnight for best results. After soaking, drain the rice.
- 2
Steam the Rice
Set up a steamer basket lined with cheesecloth or a clean kitchen towel. Place the drained sticky rice in the basket and steam over boiling water for about 20-30 minutes, or until the rice is tender and translucent.
Making the Coconut Sauce
- 3
Combine Ingredients
In a saucepan over medium heat, combine the coconut milk, sugar, and salt. Stir until the sugar is dissolved, and the mixture is heated through. Do not let it boil.
- 4
Reserve Some Sauce
Once the sauce is ready, reserve about 1/4 cup of the coconut sauce for drizzling on top later.
Assembling the Dish
- 5
Combine Rice and Coconut Sauce
Once the sticky rice is cooked, transfer it to a large mixing bowl. Pour the remaining coconut sauce over the warm rice and gently mix until the rice is evenly coated.
- 6
Prepare the Mango
Peel the ripe mangoes and slice them into thin strips or wedges.
- 7
Plate the Dish
On a serving plate, place a generous scoop of the sticky rice. Arrange the mango slices on the side or on top of the rice. Drizzle the reserved coconut sauce over the mango and rice.
- 8
Garnish
If desired, sprinkle sesame seeds or mung beans on top for added texture.
