Method

Preparing the Fresh Spring Rolls

    Prepare the Vegetables

    Wash and julienne the carrots, cucumber, and red bell pepper. Shred the lettuce and set all the vegetables aside.

    Soak the Rice Paper

    Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes soft and pliable. Remove it from the water and lay it on a clean, flat surface.

    Assemble the Rolls

    Place a small amount of each prepared vegetable, a few mint and cilantro leaves, and a small handful of vermicelli noodles in the center of the rice paper. Be careful not to overfill.

    Roll the Spring Rolls

    Fold the sides of the rice paper over the filling, then roll from the bottom up tightly to form a neat roll. Repeat with the remaining rice paper and filling.

Making the Dipping Sauce

    Mix the Sauce Ingredients

    In a small bowl, combine the peanut butter, soy sauce, honey, rice vinegar, sesame oil, water, and chili flakes. Whisk together until smooth and well combined.

    Serve

    Serve the fresh spring rolls with the dipping sauce on the side.
