Dumpling Dough Preparation

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Gradually pour in the boiling water, stirring with a fork until the dough starts to come together. Once cool enough to handle, knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix thoroughly until well combined. Set aside.

Dumpling Assembly

    Form the Dumplings

    After the dough has rested, divide it into small pieces (about 1 inch in diameter). Roll each piece into a thin circle, about 3 inches in diameter. Place a spoonful of filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal.

Cooking the Dumplings

    Steam the Dumplings

    Prepare a steamer or a pot with a steaming rack. Bring water to a boil. Place the dumplings on the steaming rack, making sure they are not touching each other. Steam for about 15-20 minutes, or until the filling is cooked through and the dough is translucent.

    In a small bowl, mix together soy sauce, rice vinegar, and chili oil. Adjust the ingredients to taste.
