In a bowl, combine the soy sauce, fish sauce, minced garlic, and sugar. Add the pork belly or chicken thighs, ensuring they are well-coated. Let marinate for at least 30 minutes or overnight in the refrigerator for best flavor.

Heat a pan over medium heat. Cook the marinated pork belly or chicken thighs for about 5-7 minutes on each side, or until fully cooked and slightly caramelized. Remove from heat and let rest before slicing.

In a separate bowl, combine the julienned carrots and daikon radish. In a small saucepan, heat the rice vinegar, sugar, and salt until the sugar dissolves. Pour the mixture over the vegetables and let sit for at least 30 minutes to pickle.
Assemble the Banh Mi

Slice the baguette lengthwise without cutting all the way through. You can lightly toast it if desired.
