Cooking Directions

  1. 1

    Prepare the Pork

Trim any excess fat from the pork shoulder. Cut it into large chunks for easier cooking.

  2. 2

    Cook the Pork

Place the pork shoulder in a slow cooker. Pour the BBQ sauce over the pork, making sure it is well coated. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

  3. 3

    Cook the Rice

In a medium saucepan, bring 3 cups of water to a boil. Add 1.5 cups of rice and a pinch of salt. Cover and reduce heat to low. Cook for 18-20 minutes, or until the rice is tender and water is absorbed. Fluff with a fork when done.

  4. 4

    Make the Coleslaw

In a large bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper. Toss until evenly coated and refrigerate for at least 30 minutes to allow flavors to meld.

  5. 5

    Assemble the Plate

Once the pork is done, shred it using two forks. On each plate, serve a generous portion of rice topped with shredded BBQ pork and a side of coleslaw.
