For the Pork

    Marinate the Pork

    In a bowl, combine the soy sauce, honey, rice vinegar, minced garlic, black pepper, and five-spice powder. Mix well.

    Prepare the Pork

    Add the pork shoulder to the marinade, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Grill the Pork

    Preheat your grill to medium-high heat. Remove the pork from the marinade and brush it lightly with vegetable oil. Grill for 6-8 minutes on each side, or until fully cooked and has nice grill marks.

    Rest the Pork

    Remove the pork from the grill and let it rest for 10 minutes before slicing.

For the Pickled Vegetables

    Make the Pickling Liquid

    In a saucepan, combine the rice vinegar, water, sugar, and salt. Bring to a boil and stir until the sugar dissolves.

    Prepare the Vegetables

    Place the julienned carrots and daikon radish in a jar or bowl. Pour the hot pickling liquid over the vegetables, ensuring they are fully submerged.

    Pickle the Vegetables

    Let the vegetables sit at room temperature for at least 30 minutes, or refrigerate for up to 1 week.

For the Banh Mi Assembly

    Slice the Baguette

    Cut each baguette lengthwise, leaving one side attached to create a hinge.

    Assemble the Banh Mi

    Layer the sliced grilled pork, pickled vegetables, cucumber slices, fresh cilantro, and jalapeño slices inside each baguette.

    Serve the Banh Mi immediately, with additional jalapeños on the side if desired.
