Prepare the Bolognese Sauce
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Increase the heat to medium-high and add the ground veal. Cook until browned, breaking it up with a spoon.

Pour in the red wine and simmer for about 2-3 minutes until it reduces slightly.

Stir in the crushed tomatoes, broth, oregano, salt, and black pepper. Bring the sauce to a simmer, then reduce the heat to low and let it cook for 30-40 minutes, stirring occasionally.

Cook the Pappardelle
While the sauce is simmering, cook the pappardelle pasta according to package instructions in salted boiling water until al dente. Drain and set aside.

Combine and Serve
Once the sauce is thickened and flavorful, combine it with the cooked pappardelle. Toss well to coat the pasta with the sauce. Serve hot, topped with grated Grana Padana.
