Method

Filet Mignon

Prepare the Filet Mignon

Season the filet mignon pieces with olive oil, salt, and black pepper. Let them rest at room temperature for 30 minutes.

Cook the Filet Mignon

Preheat a skillet over medium-high heat. Sear the filet mignon for 4-5 minutes on each side for medium-rare. Remove and let rest.

Pecorino-Fontina Potato Au Gratin

Preheat Oven

Preheat the oven to 375°F (190°C).

Layer the Potatoes

Slice potatoes thinly and layer them in a greased baking dish. In a saucepan, heat cream, garlic, salt, and pepper until warm.

Add Cheese

Pour the cream mixture over the potatoes, sprinkle with pecorino and fontina cheese, and dot with butter.

Bake

Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden.

Broccolini

Prepare the Broccolini

Blanch the broccolini in salted boiling water for 2-3 minutes, then drain.

Sauté

Heat olive oil in a skillet over medium heat. Add broccolini, season with salt and pepper, and sauté for 3-4 minutes.

Super Tuscan Reduction

Make the Reduction

In a saucepan, combine shallots and wine. Bring to a boil and reduce until syrupy, about 15 minutes.

Finish the Sauce

Stir in butter, seasoning with salt and pepper to taste.

Onion Agrodolce

Cook the Onions

In a skillet, heat olive oil and sauté onions until softened. Add balsamic vinegar and sugar, cooking until syrupy.

Season with salt to taste and set aside.
