Prepare the Mustard Seed Brittle
In a saucepan, combine sugar, water, and salt. Cook over medium heat until the sugar dissolves and the mixture comes to a boil. Add mustard seeds and let it simmer until it reaches a hard crack stage (around 300°F or 150°C). Pour onto a parchment-lined baking sheet and let it cool completely before breaking into pieces.

Prepare the Beets
If using preserved beets, drain and slice them into thin rounds. If using fresh beets, roast them until tender, peel and slice.

Assemble the Dish
On a serving plate, layer the sliced beets and sliced apples. Crumble the Gorgonzola Dolce over the top. Drizzle with apple balsamic vinegar and sprinkle the mustard seed brittle pieces on top for added crunch.
