Prepare the Vegetables

    Roast Winter Root Vegetables

    Preheat your oven to 400°F (200°C). Toss the carrots, parsnips, beets, and Brussels sprouts in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 30-35 minutes until tender and caramelized, stirring halfway through.

Prepare the Potatoes

    Roast Fingerling Potatoes

    While the vegetables roast, place the halved fingerling potatoes in a pot of salted water. Bring to a boil and cook for 10 minutes. Drain and toss with garlic, rosemary, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes alongside the root vegetables until golden.

Prepare the Steak

    Season and Grill the Rib Eye

    Season the rib eye steaks generously with salt and black pepper. Preheat your grill to high heat. Grill the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

Make the Bone Marrow Butter

    In a bowl, mix the roasted bone marrow with softened butter, parsley, and lemon juice until well combined. Season with salt to taste.
