    Prepare the Branzino

    Preheat your oven to 400°F (200°C). Pat the Branzino dry with paper towels and season both sides with salt and black pepper.

    Sear the Fish

    In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the Branzino skin-side down. Sear for about 3-4 minutes until the skin is crispy.

    Roast the Branzino

    Carefully transfer the skillet to the preheated oven and roast for another 8-10 minutes until the fish is cooked through and flakes easily.

    Cook the Fregola

    While the fish is roasting, cook the fregola pasta in a pot of boiling salted water according to package instructions. Drain and set aside.

    Prepare Cici Bean Confit

    In a saucepan, heat the remaining olive oil over medium heat. Add cooked cici beans, capers, currants, and pine nuts. Stir and cook for about 5 minutes until warmed through.

    Serve

    Plate the roasted Branzino and top with the cici bean confit mixture. Serve with a side of pickled fennel and a drizzle of balsamic caviar.
