    Prepare the Lemon Curd

    In a medium saucepan, whisk together the egg yolks, granulated sugar, lemon juice, and lemon zest. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 8-10 minutes. Remove from heat and stir in the butter until melted and smooth.

    Cool the Curd

    Transfer the lemon curd to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin), and refrigerate for at least 2 hours until chilled.

    Assemble the Brulee

    Once the lemon curd is chilled, spoon it into individual ramekins. Top each ramekin with a layer of toasted sliced almonds and a sprinkle of granulated sugar.

    Caramelize the Sugar

    Using a kitchen torch, carefully caramelize the sugar on top of each ramekin until golden and crispy. If you don’t have a torch, you can place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.
