Preparation Steps

  1. 1

    Prepare the Calamari

Clean the calamari thoroughly. Remove the head, tentacles, and innards, and keep the body and tentacles intact. Rinse under cold water and pat dry.

  2. 2

    Marinate the Calamari

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the cleaned calamari to the bowl and toss to coat. Let it marinate for at least 30 minutes.

  3. 3

    Grill the Calamari

Preheat a grill or grill pan over medium-high heat. Grill the calamari for about 2-3 minutes on each side, until the flesh is opaque and has nice grill marks. Remove from heat and let cool slightly.

  4. 4

    Slice and Plate

Slice the grilled calamari into thin rings and arrange them on a plate. Spoon the preserved caponata generously over the calamari.

  5. 5

    Garnish

Sprinkle pomegranate pearls and chopped parsley over the top for garnish before serving.
