Prepare the Bread Mixture
Preheat the oven to 350°F (175°C). In a large bowl, combine the milk, heavy cream, sugar, eggs, vanilla extract, ground cinnamon, and salt. Whisk until well combined. Tear the day-old bread into bite-sized pieces and add to the mixture. Stir in the chopped pecans and bourbon. Let the mixture sit for about 15 minutes to allow the bread to soak up the liquid.

Bake the Pudding
Pour the bread mixture into a greased baking dish. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

Cool and Serve
Remove the bread pudding from the oven and let it cool for about 10 minutes before serving. It can be served warm or at room temperature, optionally with cinnamon bark gelato on the side.
