Filet Mignon

    Prepare the Steaks

    Season the filet mignon steaks with salt and black pepper on both sides.

    Sear the Steaks

    In a skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare. Add butter during the last minute for added flavor.

Pecorino-Fontina Potato Au Gratin

    Prep the Potatoes

    Preheat the oven to 375°F (190°C). Peel and slice the russet potatoes thinly.

    Layer the Ingredients

    In a greased baking dish, layer the sliced potatoes, heavy cream, minced garlic, pecorino, fontina, salt, black pepper, and thyme until all ingredients are used.

    Bake

    Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.

Broccolini

    Prepare the Broccolini

    In a pot of boiling salted water, blanch the broccolini for 2-3 minutes until bright green. Drain and plunge into ice water.

    Sauté

    In a skillet, heat olive oil over medium heat. Add the broccolini and sauté for 3-4 minutes. Season with salt.

Super Tuscan Reduction

    Make the Reduction

    In a saucepan, combine red wine and shallots. Bring to a boil and reduce to a simmer until the liquid reduces by half. Stir in balsamic vinegar and butter, then set aside.

Onion Agrodolce

    Cook the Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and sugar, cooking until onions are soft and caramelized.

  2. 10

    Add Vinegar

    Stir in red wine vinegar and salt, cooking for another 5 minutes until the mixture thickens slightly.
