Make the Spicy Sesame Sauce
Mix the base sauce
In a medium bowl, combine 3 tablespoons of tahini (or Chinese sesame paste), 2 tablespoons of soy sauce, 1 tablespoon of Chinese black vinegar, 1 tablespoon of chili oil (more or less to taste), 1 teaspoon of sugar, and 2 tablespoons of warm water. Whisk until smooth and set aside.
Add aromatics
Mince 2 cloves of garlic and add to the sauce. Optionally, add 1 teaspoon of grated ginger for added depth. Stir well to incorporate.
Cook the Noodles
Boil the noodles
Bring a large pot of water to a boil. Add 8 ounces of wheat noodles (such as Chinese wheat noodles or spaghetti) and cook according to package instructions until al dente.
Drain and rinse
Drain the noodles and rinse under cold water to stop cooking and remove excess starch. Set aside.
Prepare the Toppings
Chop the scallions
Thinly slice 2 scallions and set aside for garnish.
Crush the peanuts
Roughly chop or crush 1/4 cup of roasted peanuts for topping.

Combine noodles and sauce
