Method
Preparation
Prepare the Meats
Rub the brisket and pork ribs with your favorite dry rub and let it marinate for at least 2 hours or overnight in the refrigerator. Smoke the brisket at 225°F for about 10-12 hours until tender, and smoke the ribs for 4-5 hours.
Cook the Sausages
Grill the locally made sausages over medium heat until fully cooked, about 10-15 minutes.
Baked Beans
Prepare Baked Beans
In a pot, combine the canned baked beans, barbecue sauce, and brown sugar. Simmer on low heat for 20 minutes, stirring occasionally.
Coleslaw
Make Coleslaw
In a large bowl, mix shredded cabbage, grated carrots, mayonnaise, apple cider vinegar, sugar, and season with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes.
Whipped Butter
Prepare Whipped Butter
In a mixing bowl, beat the softened butter and molasses together until light and fluffy. Set aside.
Serve
Assemble the Platter
Arrange the smoked meats, baked beans, coleslaw, bread rolls, whipped butter, pickles, and barbecue sauce on a large serving platter. Serve warm.
