    Make the Marinara Sauce

    In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the San Marzano tomatoes and salt, stirring to combine. Simmer for 20-25 minutes, allowing the sauce to thicken.

    Prepare the Smoked Almond Pesto

    In a food processor, combine chopped smoked almonds, fresh basil, and a pinch of salt. Pulse until finely chopped. Gradually add olive oil (about 1-2 tbs) until it reaches a pesto-like consistency.

    In a serving bowl, place a generous amount of the marinara sauce. Top with baby arugula, a sprinkle of plant-based parmesan cheese, and a drizzle of aged balsamic vinegar. Add dollops of smoked almond pesto and finish with cracked black pepper to taste.
