Prepare the Walleye
Cut the walleye fillets into finger-sized strips.

Set Up Breading Station
In three separate bowls, set up the breading station: one with flour mixed with dried herbs, salt, and pepper; one with beaten eggs; and one with bread crumbs mixed with grated Parmesan cheese.

Bread the Walleye
Dredge each walleye strip in the flour mixture, then dip it into the beaten eggs, and finally coat it with the bread crumb mixture.

Heat Oil
In a large skillet, heat oil over medium-high heat until hot.

Fry the Walleye Fingers
Carefully place the breaded walleye fingers into the hot oil. Fry until golden brown on each side, about 3-4 minutes per side. Remove and drain on paper towels.

Serve hot with tartar sauce and lemon wedges on the side.
