    Prepare the Fish

    Heat olive oil in a skillet over medium-high heat. Season the mahi-mahi fillets with Cajun seasoning on both sides.

    Cook the Fish

    Place the seasoned mahi-mahi in the skillet and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from heat and let it rest for a couple of minutes.

    Make the Salsa

    In a bowl, combine black beans, corn, diced red onion, chopped cilantro, and lime juice. Mix well to combine.

    Assemble the Tacos

    Take a piece of flatbread and add a layer of shredded lettuce. Place a piece of blackened mahi-mahi on top, followed by a generous spoonful of the black bean and corn salsa. Top with shredded pepper jack cheese and drizzle with fiesta sauce.
