Black & Bleu Quesadilla Recipe
Cajun blackened chicken, bleu cheese, and cojack cheese all stuffed in a jalapeno tortilla and griddled until golden brown. Served with a side of our black bean corn salsa.

Prepare the Chicken
If not already cooked, season the chicken with Cajun seasoning and cook thoroughly in a skillet over medium-high heat until blackened and cooked through. Allow to cool slightly and then chop into bite-sized pieces.

Assemble the Quesadilla
On one half of each tortilla, layer the blackened chicken, bleu cheese, and cojack cheese. Fold the tortilla over to create a half-moon shape.

Cook the Quesadilla
In a large skillet, heat olive oil over medium heat. Place the quesadilla in the skillet and cook for 3-4 minutes on each side, or until golden brown and the cheese is melted.

Slice and Serve
Remove the quesadilla from the skillet, let it rest for a minute, then slice into wedges. Serve with black bean corn salsa on the side.
