For the Grilled Salmon

Method

Preparing the Grilled Salmon

  1. 1

    Marinate the Salmon

In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and chopped dill. Add the salmon fillets to the bowl, making sure they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed and glowing.

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill, skin side down. Grill for about 5-6 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Seasonal Vegetables

  1. 4

    Prepare the Vegetables

In a large bowl, combine sliced zucchini, bell pepper, and asparagus. Drizzle with olive oil, and season with salt, black pepper, and garlic powder. Toss to combine.

  2. 5

    Grill the Vegetables

Place the seasoned vegetables on the grill (or in a grilling basket) and cook for about 8-10 minutes, turning occasionally until they are tender and slightly charred.

Serving

  1. 6

    Plate the Dish

Once the salmon and vegetables are grilled, remove them from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate. Garnish with additional dill if desired.
