Calamari Preparation

Prepare the Calamari
In a large bowl, rinse the cleaned calamari rings under cold water and pat dry with paper towels.

Mix the Dry Ingredients
In another bowl, combine the flour, cornstarch, salt, black pepper, and paprika. Mix well.

Coat the Calamari
Dredge the calamari rings in the dry mixture, ensuring they are evenly coated. Shake off any excess flour.

Dip in Eggs
Dip each coated calamari ring into the beaten eggs, then return to the dry mixture for a second coating.

Heat Oil
In a large heavy-bottomed pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, ensuring not to overcrowd the pot. Fry for 2-3 minutes until golden brown.

Drain and Serve
Using a slotted spoon, remove the fried calamari and place them on a plate lined with paper towels to drain excess oil. Serve hot.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes, and add oregano, basil, salt, black pepper, and red pepper flakes (if using).

Simmer the Sauce
Bring the sauce to a simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

Taste and Adjust Seasoning
Taste the sauce and adjust seasoning if necessary. Remove from heat.
