Tamale Dough

Method

Preparation

  1. 1

    Soak Corn Husks

Soak the corn husks in warm water for about 30 minutes until they are soft and pliable.

  2. 2

    Make Tamale Dough

In a large mixing bowl, combine masa harina, baking powder, and salt. In a separate bowl, beat the vegetable shortening until fluffy. Gradually add the masa harina mixture and chicken broth, mixing until a smooth dough forms.

  3. 3

    Prepare Fillings

In a bowl, mix the shredded chicken with salsa verde and cheddar cheese until well combined.

  4. 4

    Assemble Tamales

Take a soaked corn husk and spread about 1/4 cup of dough onto the center. Place 2 tablespoons of the filling on top of the dough, then fold the sides of the husk in and roll it up tightly. Secure with a piece of string or another strip of corn husk.

  5. 5

    Steam Tamales

Place the tamales upright in a steamer basket, cover with a damp cloth, and steam for about 1 to 1.5 hours, or until the dough is firm and cooked through.

  6. 6

    Serve

Remove the tamales from the steamer and let them cool for a few minutes before serving. Enjoy with additional salsa or your favorite toppings.
