With your choice of chile verde, shredded chicken, or shredded beef smothered with chile colorado and melted cheese.
If you're using shredded chicken or beef, ensure it's cooked and shredded. Set aside.
In a small saucepan, heat the Chile Verde sauce until warm. In another saucepan, heat the Chile Colorado sauce until bubbling.
Warm the tortillas slightly in a dry skillet. Place a portion of shredded chicken or beef in the center of each tortilla.
Spoon a generous amount of Chile Verde sauce over the filling in each tortilla.
Fold the sides of the tortilla over the filling and roll tightly to form a burrito.
Place the rolled burritos in a baking dish, then pour the heated Chile Colorado sauce over the top.
Sprinkle shredded cheese generously over the top of the burritos.
Preheat the oven to 350°F (175°C) and bake the burritos for 15-20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly. Serve hot, topped with sour cream, chopped cilantro, and diced avocado if desired.
