Prepare the Meat
In a slow cooker, place the pork shoulder and season with salt, black pepper, cumin, and oregano. Add the onion, garlic, bay leaves, and dried red chiles on top.

Add Sauce
In a blender, combine the chipotle peppers in adobo sauce and chicken broth. Blend until smooth, then pour over the pork in the slow cooker.

Cook
Cover and cook on low heat for 8 hours or until the pork is tender and easily shredded with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir to combine with the sauce.
