Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a large bowl, mix together salt, black pepper, cumin, oregano, garlic powder, and onion powder. Rub the spice mixture all over the pork pieces.

Cook the Pork
In a slow cooker, combine the seasoned pork, lime juice, orange juice, bay leaves, and water. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Discard any large pieces of fat.

Crisp the Pork (Optional)
For a crispy texture, spread the shredded pork onto a baking sheet and broil in the oven for 5-7 minutes until the edges are crispy.

Serve
Serve the carnitas in warm tortillas with your favorite toppings such as diced onions, cilantro, lime wedges, and avocado.
