    Roast the Poblano Peppers

    Preheat your oven to 425°F (220°C). Place the poblano peppers on a baking sheet and roast for about 20-25 minutes, turning occasionally, until the skin is blistered and charred. Remove from the oven and let them cool.

    Prepare the Poblano Strips

    Once cooled, peel the skin off the roasted poblano peppers, remove the seeds, and slice them into thin strips.

    Assemble the Quesadilla

    Heat a skillet over medium heat and add olive oil. Place one tortilla in the skillet, sprinkle half of it with a generous amount of cheese, add a layer of roasted poblano strips, and top with more cheese. Fold the tortilla in half.

    Cook the Quesadilla

    Cook the quesadilla for about 3-4 minutes on each side, until the cheese is melted and the tortilla is golden brown and crispy.

    Serve

    Remove from the skillet and let it cool for a minute. Cut into wedges and serve with your favorite salsa or guacamole.
