Prepare the Chorizo
In a skillet over medium heat, crumble and cook the chorizo until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

Layer the Nachos
On a large baking sheet, spread half of the tortilla chips. Top with half of the cooked chorizo, black beans, green chile sauce, and shredded cheese.

Add Vegetables
Sprinkle half of the diced bell peppers, onions, and black olives over the top.

Repeat Layers
Repeat the layers with the remaining tortilla chips, chorizo, black beans, green chile sauce, and cheese. Finish with the remaining bell peppers, onions, and black olives.

Bake
Preheat the oven to 350°F (175°C). Bake the nachos in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and top with jalapeños (if using). Serve hot with sour cream and guacamole on the side.
