    Prepare the Chicken

    In a bowl, mix the shredded chicken with salt and pepper. Set aside.

    Warm the Tortillas

    In a skillet, heat the olive oil over medium heat. Lightly fry the corn tortillas one by one for about 30 seconds on each side until soft and pliable. Remove and set aside.

    Assemble the Enchiladas

    Take a warm tortilla, add about 2 tablespoons of the shredded chicken and a tablespoon of sour cream. Roll the tortilla tightly and place it seam side down in a baking dish. Repeat until all tortillas are filled.

    Add Salsa

    Pour the salsa española evenly over the assembled enchiladas, making sure they are well covered.

    Bake

    Preheat the oven to 375°F (190°C). Bake the enchiladas for 20-25 minutes until heated through.

    Garnish and Serve

    Slice the jalapeños and sprinkle them over the baked enchiladas. Garnish with chopped cilantro and serve hot.
