Prepare the Tortillas
In a large skillet, heat the olive oil over medium heat. Lightly fry each corn tortilla for about 10-15 seconds on each side until they are warm and pliable. Remove from the skillet and set aside.

Assemble the Enchiladas
Spread a layer of carnitas onto the center of each tortilla. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish.

Add the Mole Sauce
Once all the tortillas are rolled and placed in the baking dish, pour the mole amarillo sauce evenly over the top of the enchiladas.

Top with Cheese
Sprinkle the shredded cheese generously over the mole sauce.

Bake
Preheat your oven to 375°F (190°C). Bake the enchiladas in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven, let cool slightly, and serve topped with pico de gallo and sour cream. Enjoy!
