    Prepare the Dough

    In a medium saucepan, combine water, butter, 2 tablespoons of sugar, and salt. Bring to a boil over medium heat, stirring occasionally. Once boiling, remove from heat and stir in flour until the mixture forms a ball. Allow to cool slightly.

    Add Eggs

    Once the dough is cool enough to handle, add the eggs one at a time, mixing well after each addition until fully incorporated.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil to 375°F (190°C).

    Pipe the Dough

    Transfer the dough to a piping bag fitted with a star tip. Pipe strips of dough (about 4-6 inches long) directly into the hot oil.

    Fry the Churros

    Fry the churros until golden brown, about 2-4 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain.

    Coat in Sugar and Cinnamon

    In a shallow bowl, mix 1 cup of granulated sugar with 2 teaspoons of cinnamon. Roll the fried churros in the sugar mixture until fully coated.

    Serve warm with chocolate sauce or dulce de leche for dipping, if desired.
