Roast the Meat
Cover the pork with aluminum foil and roast in the preheated oven for about 3 hours, or until the pork is tender and easily shreds with a fork.
- 3
Prepare the Sauce
While the pork is roasting, char the green chiles on a grill or under the broiler until blackened. Place them in a plastic bag to steam for about 10 minutes, then peel and chop.
- 4
Blend the Ingredients
In a blender, combine the roasted tomatillos, charred green chiles, onion, garlic, cilantro, chicken broth, and lime juice. Blend until smooth.
- 5
Combine and Simmer
Once the pork is done, shred it and return it to the roasting pan. Pour the blended sauce over the pork and mix well. Simmer on low heat for about 30 minutes to allow the flavors to meld.
