Prepare the Guajillo Sauce
Remove the stems and seeds from the guajillo peppers. In a pan, toast the peppers over medium heat for 2-3 minutes until fragrant. Add to a blender with 1 cup of chicken broth and blend until smooth. Set aside.

Brown the Pork
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the diced pork and season with salt and black pepper. Cook until browned on all sides, about 5-7 minutes.

Combine and Simmer
Pour the guajillo sauce over the pork and add the remaining chicken broth, cumin, and oregano. Stir well to combine. Bring to a simmer, cover, and cook on low heat for 1.5 to 2 hours, until the pork is tender.

Serve
Adjust seasoning with salt and pepper to taste. Serve hot with rice or tortillas.
