    Prepare the Pork

    Trim excess fat from the pork shoulder and cut it into large chunks.

    Make the Marinade

    In a bowl, combine orange juice, lime juice, minced garlic, cumin, oregano, salt, and pepper.

    Marinate the Pork

    Add the pork chunks to the marinade and toss to coat. Let it marinate for at least 1 hour or overnight in the refrigerator.

    Prepare for Roasting

    Preheat the oven to 300°F (150°C). Place the marinated pork in a roasting pan, add the sliced onion and bay leaves.

    Slow Roast the Pork

    Cover the pan with foil and roast in the preheated oven for 4-5 hours, or until the pork is tender and shreds easily.

    Crisp the Pork

    Remove the pork from the oven, shred it with two forks, and spread it on a baking sheet. Broil for 5-10 minutes until crispy.

    Serve

    Serve the carnitas in tacos, burritos, or over rice with your favorite toppings.
