Prepare the Shrimp
Peel and devein the shrimp, then set them aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, and sauté until softened, about 5 minutes.

Add Garlic
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Make the Sauce
Add canned diced tomatoes, red chile powder, cumin, salt, and black pepper to the skillet. Stir well and let it simmer for about 10 minutes to thicken.

Cook the Shrimp
Add the shrimp to the spicy sauce and cook for about 5-7 minutes, or until shrimp are opaque and cooked through.

Finish with Lime and Cilantro
Remove from heat and stir in lime juice and chopped cilantro before serving.
